Free Range Wild Boar and Rare Breed pigs

Harmony Herd has a herd of pigs. Well, actually we have two herds, um, well, three herds really. We have one herd of Wild Boar, one herd of Oxford Sandy and Black pigs (hereafter called OSBs to save typing) and one herd of a cross between the two. WHY? Well, Wild Boar have one litter a year, whereas OSBs have more than one. Wild Boar litters are around 4 or 5, and OSBs have around 10, with a bit of luck. OSB piglets reach a good weight in about 8 months, with Wild Boar piglets taking over 14 months. With a bit of thought, in order to sell meat, at a reasonable price, we cross the breeds. But not always - hence the 3 herds.

OK - now concentrate - there are questions later! We have some sows that are 50% Wild Boar and 50% OSB, and some sows that are 75% Wild Boar and 25% OSB. This means that some of the piglets are 75% Wild Boar and some are 87.5% Wild Boar. With me so far? Sometimes we cross a Wild Boar X sow to Scratchy, the OSB Boar. You can work that one out yourself! The result? Fantastically tasty pork! Just in case you are wondering, the Wild Boar Boar is called Nigel. No, we did not name him. No, he does not come to call. And the Wild Boar is a breed, but, yes, ours are pretty wild. Why Harmony Herd? We started the herd near a hamlet called Harmony, in remote west West Wales. Seemed logical at the time.

We process all the pigs on the farm. We make prize winning sausages, burgers, Gold Award Bacon and Gammon, not to mention all the cuts like chops, joints, loins, diced and minced pork. We make our own mix of herbs and spices for the burgers and sausages, to ensure that there are absolutly no additives, E numbers, and nasty stuff, and we use rice flour so are products are Coeliac safe. We can do cuts to order, trotters, heads, everything from a pig...
